Recipe: Falafel-inspired chickpea patties
This simple to make falafel and hummus mix is high in fibre and full of flavour.

I started out with the plan of making falafels but somewhere along the lines I deviated from that plan and ended up a with a mixture of falafel and hummus turned into patties.
The raw mixture even tastes good enough to eat. I left part of the mixture raw to eat with some fresh olive bread that was coming out of the oven.
These are a great plant-based protein option that is high in fibre with a good dose of flavour, to use as snack or in a wrap with salad. Perfect to pop in your bag for that post ride snack.
Ingredients
1 can chickpeas, drained and rinsed
¼ cup tahini
1 small brown onion, roughly chopped
¼ cup chopped parsley
½ teaspoon ground cumin
½ teaspoon ground ginger
1 tablespoon ground fresh turmeric
Pinch of salt and pepper
½ cup of liquid taken Kalamata olive jar
Method
* Add all ingredients to a blender. Roughly blended so the mixture still has chunks throughout.
* Heat a heavy based saucepan with your choice of oil.
* Roll mixture into balls or patties; size depending on what you want to use them for.
* Cook for 5-8 minutes each side. Set aside on paper towel to drain any excess oil
