Banana Bread Recipe

Leave the sugar laden banana bread at the cafe and make something nourishing and delicious for that post ride treat. This loaf is free of gluten, refined sugar and dairy so it is ideal for everyone. I make a double batch, cook, slice and freeze.
Ingredients
4 ripe bananas
3 eggs, lightly whisked
1Tbls honey
1Tbls coconut oil (melted)
1/4 cup rice or almond milk
1 1/2 cups brown rice flour
1 tsp baking powder
3 Tbls L.S.A
1tsp ground cinnamon
Optional: 1/3 cup chopped walnuts, 1/2 cup sultanas
Method
Preheat oven to 180 degrees celcius and line a loaf tin with baking paper.
Mash to bananas and stir in eggs, honey, coconut oil.
Mix together flour, baking powder, L.S.A and cinnamon in a separate bowl.
Stir wet and dry ingredients together and spread into loaf tin.
Bake for 30 minutes.
