Let's face it – prunes aren't exactly the most glamorous of dried fruits. They're the ugly sister to dates and figs but prunes are a powerhouse of nutrition. They're rich in antioxidants, iron and have Vitamin A, K, magnesium and potassium. When paired with cacao, prunes add a deep, rich flavour that makes for a chocolatey treat. These bars are full of quality fats, antioxidants and carbohydrates.

I adore these power bars. I enjoy them in the afternoon with a cup of tea, to take with me on road trips or for a treat at work. Beware – they're on the gooey side.

These bars are gluten, dairy and egg free. Perfect for people avoiding or intolerant to those.

INGREDIENTS

1 1/4 cups dried prunes (soaked in hot water for 15min then drained)

3/4 cup coconut milk

1/4 cup coconut oil

3/4 cup brown rice flour

1/2 cup cacao powder

1/3-1/2 cup coconut sugar

1tsp baking powder

Pinch of salt

METHOD

1. Preheat oven to 180 degrees Celcius

2. Place prunes in food processor with 2Tbsp hot water. Blend until it becomes a soft paste.

3. Add coconut milk and coconut oil. Blend 45 seconds until mostly smooth.

4. Add remaining ingredients and blend until mixed thoroughly.

5. Line an 8×8 inch square pan with non stick paper. Spread brownie mixture into pan and smooth batter evenly.

6. Bake for 28-30min. Cool completely on a cooling rack.
