RECIPE: Wholesome carrot and apple muffins
I am a massive fan of baked goods but I often find store bought or cafe items to be full of stuff I don't want to eat; margarine, refined sugar and processed white flour. these muffins are sweetened naturally and are a delicious, dense treat. they are perfect for long car trips, after a training session or the afternoon munchies

INGREDIENTS
¼ cup olive oil or melted butter, coconut oil.
¼ cup honey
150 g raisins
250 g grated carrot
250 g grated apple
3 organic eggs
½ cup orange juice – freshly squeezed
1 teaspoon vanilla extract or paste
300 g wholemeal flour or gluten free flour.
2 teaspoons baking powder
100 g walnuts
METHOD

Pre heat the oven to 170 degrees celcius (fan forced)

Combine oil, honey, raisins, carrot, apple, eggs, orange juice and vanilla into a large mixing bowl.

Add the flour, baking powder and walnuts. Mix well until mixture is combined.

Spoon muffin mix into prepared muffin tins. Either well greased or lined with paper liners.

Bake for 35 – 40 minutes or until cooked through.
